Required products :

  • 250 grams of Arabic couscous
  • 250 milliliters of vegetable broth (boiling)
  • 400 grams of chickpeas (canned, drained)
  • 1-2 tablespoons olive oil
  • 300 grams of sliced ​​zucchini
  • 300 grams of small tomatoes - cut in half
  • 250 grams of calum cheese, cut into sticks

for dressing:

  • 125 milliliters of olive oil
  • 3 tablespoons lemon juice
  • 2 cloves garlic, finely chopped
  • 2 tablespoons fresh mint leaves, chopped
  • 1/2 teaspoon sugar

Method of preparation :

Put the couscous in a bowl and pour the hot vegetable broth over it. Stir with a fork and leave covered for 4 minutes to absorb the liquid.

Meanwhile, mix all dressing products.

Mix the couscous with a fork and pour the chickpeas, pour half of the dressing. Mix well and place in a large serving dish.

Heat 1 tablespoon olive oil in a pan and fry the zucchini on each side for 2-3 minutes until browned. Drain on paper.

Then roast the tomatoes in the same pan, with the cut side down, to caramelize them as well.

Put the vegetables next to the couscous.

Dry the pan and add more fat. Fry Halloumi cheese for 2-3 minutes on each side to make it golden and crispy.

Place the cheese on top of the vegetables and pour over the remaining dressing. Serve the salad warm.
