Required products :

  • 1 1/2 teaspoon einkorn
  • left
  • 1 1/2 kg red beets - together with the stalks (separate the leaves for the next use)
  • 1 tablespoon olive oil
  • 2 cloves garlic
  • 1 teaspoon white wine vinegar
  • 2 tablespoons sugar
  • 2 stalks of tarragon
  • 340 grams of apples, peeled and sliced
  • 4 medium garlic cloves, finely chopped
  • 1 1/2 teaspoons pecans - roasted
  • onion and mustard dressing (recipe is in link)

Method of preparation :

Cover the einkorn with water and let it stand for 2 hours. Then season with salt and cook until done. Drain and refrigerate.

Wash the beets (without the stems) well and put them in a pan, pour olive oil and cover with foil. Bake at 220 degrees for 1 hour until the vegetables are soft.

Peel a squash, grate it and dry it with paper. Cut and refrigerate.

Meanwhile, heat 1 tablespoon of olive oil in a pan. Add the garlic and fry for 30 seconds. Add the chopped beet stalks and fry for about 10 minutes. Season with salt and refrigerate to cool completely.

In a saucepan, combine the vinegar with 1 teaspoon of water, sugar, 1 teaspoon of salt and tarragon. Bring to the boil until the salt and sugar crystals melt.

Put the apples and onions in a large bowl and place in another bowl full of cold water. For the apples, add the hot vinegar dressing and stir to cool the apples as quickly as possible. Discard the tarragon and press the apples and leave to taste for 1 hour in the refrigerator.

When you are ready to prepare the salad, drain the onions and apples from the dressing. Combine with einkorn, beets, stewed beetroot stalks, and add pecans. Drizzle with mustard dressing ( recipe can be found here ).
