Preheat the oven to 300 degrees and line a baking tray with parchment paper. Wash, peel the carrots and cut them into fine medallions. Put them in a bowl, season with salt, pepper, olive oil, cumin and stir.
Spread the vegetables on a sheet of parchment or foil and bake for 30 minutes.
Meanwhile, boil the pasta, strain and cool.
Put it in a bowl, add the prepared carrots, season with the crushed cheese, finely chopped parsley and squeeze the lemon juice.
Stir, cool and serve the salad cold.
