Curly kale is a super food with a high content of vitamins and powerful antioxidants. If you do not find one on the market, you can always replace it with spinach or lettuce, which also have many useful nutrients.

Add a variety of chopped vegetables such as broccoli, cabbage and carrots to the green salad. A good finish is the addition of salmon for more protein and garlic yogurt dressing to complete the palette of flavors and tastes. Preparation time - 20-30 minutes.

Required products (for 4 servings) :

  • 450 grams of salmon fillet
  • 3 buy kale (chopped)
  • 1 bowl broccoli (chopped)
  • 1 bowl red cabbage (chopped)
  • 1 bowl carrots (finely grated)
  • 1/2 cup sunflower seeds (roasted)

for dressing:

  • 1/2 cup low-fat yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons lemon juice
  • 2 tablespoons parmesan (grated)
  • 1 tablespoon fresh parsley (finely chopped)
  • 1 tablespoon hot red pepper (chopped)
  • 2 teaspoons soy sauce or Tamari sauce
  • 1 medium clove of garlic
  • 1 tablespoon chives (chopped)
  • 1/4 teaspoon ground black pepper

Method of preparation :

salmon fillet:

Preheat the oven to a high temperature. Put aluminum foil in a baking tray and place the salmon fillet skin side down. Bake it on the top row for about 10-12 minutes. Rotate the pan once so that it bakes on all sides. Then cut the fillet into 4 portions.

the dressing:

Mix the yogurt, mayonnaise, lemon juice, parmesan, parsley, chives, soy sauce, garlic and black pepper in a small bowl. Mix until homogeneous.

salad:

Mix kale, broccoli, red cabbage, carrots and roasted sunflower seeds in a large bowl. Add 3/4 cup of the dressing and mix the salad well. Serve it in four plates, putting in each a piece of salmon and 1 tablespoon of the remaining dressing.
