Combine ground bread, dry and wholemeal mustard, sugar, lemon zest (finely grated). Season with salt and pepper.
Wash the fish fillet and place it in a large enough tray lined with baking paper (place the fillet skin side down).
Cover it with the aromatic mixture well and press so that the spices stick well to the fish.
Bake for 20-30 minutes at 180 degrees (preheat the oven), until the fish is ready and until the fillet acquires a golden crispy crust.
Serve the dish warm with potatoes or salad.
