Necessary products:

  • 2 lemons
  • 2 limes
  • 1/4 tea cup white miso
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons maple syrup
  • 1/4 teaspoon black pepper
  • pinch of cayenne pepper
  • 1 salmon fillet with skin
  • green onions (or chives) for garnish, chopped

Method of preparation:

Move the oven rack to the top row and heat to a very high temperature (above 200 degrees). Cover a baking tray with parchment paper.

Mix in a small bowl the juice of one lemon and one lime. Add the miso, olive oil, maple syrup, black pepper and hot red pepper. Place the salmon face down on the prepared pan and spread the miso mixture over the salmon. Cut the remaining lemon and lime in half and arrange around the salmon.

Bake for 7 to 12 minutes in a preheated oven. Serve with lemon and lime slices and sprinkle with chives or green onions if desired.
