How To Cook Salmon With Sorrel Sauce And Walnut Paste - Recipe

Required products :

  • 3 pieces of salmon, each weighing 200 grams
  • 1/2 cup walnuts
  • tarragon stalk
  • stalk of basil
  • 1 tablespoon butter

For the marinade:

  • celery stalk
  • rosemary stalk
  • 2 tablespoons oil

For the sauce:

  • 1 teaspoon liquid cream with 22% fat
  • sorrel connection
  • 2 tablespoons dry white wine
  • 1 small onion
  • 1.5 teaspoons lemon juice
  • salt and ground white pepper

 

Method of preparation :

Wash the celery and cut it into thin strips, take only the petals from the rosemary stalk.

Put the fish in a bowl, pour the oil and sprinkle with the prepared spices. Cover with plastic wrap and leave the salmon in a dark place for about 20 minutes.

Meanwhile, make the sauce. Wash and dry the sorrel, peel the onion and chop finely. Mix the two vegetables in a pan, pour the white wine and put the mixture on low heat for 2 minutes.

Then add the cream, lemon juice, stir and bring to a boil. Let it cook for 10-12 minutes on medium heat. When you remove from the heat, grind by passing it through a sieve.

Return the sauce to the pan, season with white pepper and salt, stir and leave in a warm place.

Grind the walnuts together with the basil and tarragon, pour into a bowl and add the butter.

Dry the fish and arrange in a tray. Season with salt and pepper, then put the walnut paste on each portion.

Bake for approximately 20 minutes in the oven at 180 degrees.

Serve the salmon with sorrel sauce and enjoy.
