For more fiber, use whole grain couscous. Serve with roasted carrots and broccoli if desired.

Required products :

  • 1 tablespoon extra virgin olive oil
  • 1 cup couscous (whole grain)
  • 1/2 cup red pepper, chopped
  • 1/3 cup pistachios, crushed
  • 1 large onion, chopped
  • 1/2 teaspoon sea salt
  • 1 and 1/2 cup water
  • 1 tablespoon parsley, chopped + more to garnish
  • 1 tablespoon fresh oregano, chopped + more to garnish
  • salmon fillet, skinless and cut into 4 portions
  • 1/4 teaspoon ground black pepper
  • 4 slices of lemon

* A tea cup is used to measure the quantities.

Method of preparation :

Heat olive oil in a large non-stick pan. Roast the couscous in it for about 5 minutes together with the black pepper, pistachios, onion and salt. Stir often. Then pour the water, cover with a lid and cook for 5 minutes, stirring occasionally. Add 1 tablespoon of parsley and oregano.

Season the salmon with salt and pepper and place on the couscous. Reduce the heat, cover and cook until the fish is cooked through and the water is absorbed (5-7 minutes). Serve garnished with fresh parsley, oregano and lemon slices.
