Salmon and walnuts are a great source of omega-3 fatty acids, and lemon for garnish provides the useful vitamin C. You can combine it with various garnishes such as plain salad, baked potatoes or quinoa.

Required products :

  • 2 teaspoons Dijon mustard
  • 1 clove garlic, chopped
  • 1/4 teaspoon lemon zest
  • 1 teaspoon lemon juice
  • 1 teaspoon fresh rosemary, chopped
  • 1/2 teaspoon honey
  • 1/2 teaspoon salt
  • 1/4 teaspoon paprika
  • 3 tablespoons breadcrumbs (panko)
  • 3 tablespoons walnuts, finely chopped
  • 5 teaspoons extra virgin olive oil
  • 400 grams of salmon fillet, without skin (4 pieces)

for garnish:

  • lemon slices
  • parsley, finely chopped

Method of preparation :

Preheat oven to 220 degrees. Place a large sheet of baking paper in a tray.

Mix in a small bowl the mustard, garlic, lemon zest, lemon juice, rosemary, honey, salt and paprika.

In another bowl, mix the breadcrumbs, crushed walnuts and olive oil.

Place the salmon fillets on baking paper. Spread the mustard mixture on top, sprinkle with the breadcrumb mixture and press well to stick. Sprinkle with olive oil and bake in a preheated oven for 8-12 minutes or until done.

Serve the finished salmon with lemon slices, sprinkling with parsley.
