Spread the salmon with 1 tablespoon of olive oil.
Combine the lemon peel, a quarter teaspoon of salt and a pinch of black pepper, sprinkle the fish fillets generously with the resulting mixture and leave for 30 minutes to absorb the aromas.
Heat the remaining fat in a pan and fry the onion, ginger and garlic in it. Cook until soft - about 2-3 minutes. Add bulgur and broth, cook for 3 minutes.
Place the fish fillets on top and season the dish with salt and pepper.
Transfer the pan to the oven and bake the fish at 200 degrees for 6-7 minutes. Remove the pan from the oven and cover with foil, bake for another 15 minutes.
Transfer the fish to a plate and stir the bulgur with a fork to separate the grains. Add half a pomegranate and coriander, pour olive oil and season to taste. Return the fish to the pan, arrange the avocado slices, sprinkle with the remaining pomegranate and coriander.
Drizzle with lemon juice and serve.
