Required products :

  • 2 teaspoons flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon black pepper
  • 5 tablespoons cold butter cubes
  • 1 teaspoon dried dill
  • 150 grams of grated cheddar
  • 3/4 cup buttermilk
  • 2 tablespoons cream
  • 8 slices of ham
  • 2 tea cups arugula

for horseradish sauce:

  • 1 cup sour cream
  • 1 pickle, finely chopped
  • 2 teaspoons chopped tarragon
  • 1 teaspoon horseradish

for mustard with apricots:

  • 1/2 cup apricot jam
  • 2 tablespoons wholemeal mustard
  • 1 tablespoon Dijon mustard
  • 2 thinly sliced ​​green onions

Method of preparation :

Preheat oven to 180 degrees. Line a baking tray with parchment paper.

Mix the flour, pepper and salt together with the leavening agents. Add the butter and make crumbs by rubbing it into the flour. Add the dill and most of the cheddar. Stir.

Pour the buttermilk and knead the dough, which will be quite dry and crumbly.

Stir several times to get a smooth ball, which roll out a thick loaf about 1 cm and cut circles in the shape of cakes.

Transfer them to the pan and spread with the cream. Sprinkle with the remaining cheddar and bake for 15-18 minutes until lightly browned.

Prepare the sauce by combining all the products and mix very well to obtain a uniform smooth consistency.

Prepare the other mustard and apricot sauce in the same way - mix all products.

Make sandwiches from the toasted cakes, spread them with the milk sauce, arrange a slice of ham and a few leaves of arugula, pour the sweet and spicy sauce on top and close with a second loaf.
