Required products :
bacon with skin
wholesale ground salt
garlic
bay leaf optionally

Method of preparation :
Wash the bacon very thoroughly, cleaning the skin well with an auxiliary knife.
A little trick to get soft skin: put a piece of bacon in a colander and pour boiling water over it, which should pass in front of all the skin.
Then cut into small pieces 5-7 centimeters wide, and garlic - into large pieces.
Using a sharp knife, pierce the bacon in several places and put the garlic in these slits.
Place in a suitable container and sprinkle generously with coarsely ground salt. The layer should be about 1.5 - 2 centimeters thick. All sides of the piece should be well salted so that the white crystals can absorb as much moisture as possible from the bacon.
Place the piece in a suitable container with the skin facing down, sprinkle with salt again and cover with foil or close with a lid. Refrigerate for about a week, turning the pieces periodically.
If you decide to use bay leaves, put them between the pieces of bacon.
After about 7 days, clean the bacon from the salt (you can wash with water, but then you must dry). Then wrap in foil or baking paper and store in the refrigerator compartment.
You can serve with mustard, garlic and leeks or green onion feathers.
