Required products :

85 milliliters of cream (high fat - 33%)

3 tablespoons butter

160 grams of sugar

0.5 teaspoon salt

 

Method of preparation :

Pour the sugar into a suitable container, melt it over low heat, stirring constantly.

 

It must melt without burning.

 

Remove the pan from the heat and add the oil (at room temperature). The temperature is very important so that no lumps form in the caramel when mixed hot and cold. Stir the butter well.

 

Add the hot cream. Bubbles will form immediately, be careful. Stir vigorously and add salt.

 

Leave the mixture on the stove for 3 minutes, stirring constantly until the salt dissolves.

 

The hot caramel has a liquid consistency and flows easily on the spoon. When it cools, it will thicken.

You can store in a closed jar for several days.
