Pour 6 tea cups of water into a saucepan and boil the rice. Prepare a form for a cake or bowl. Put the pine nuts on the bottom. Distribute the fish tightly and set aside. Cut the eggplant into slices, salt it and let it drain.
Roll the slices in flour and fry in hot fat. Strain and arrange the eggplant slices tightly on the fish. In the same fat fry the finely chopped tomatoes, peppers, garlic, parsley and season with salt and pepper.
Stew the mixture until the vegetables soften and spread it on the eggplant. Finally add the rice, press evenly with a spoon and cool for an hour or two. Using a plate, turn the cake over and remove the form. Serve it decorated with spices of your choice.
