How To Cook Salty Cheesecake With Red Beets And Onions - Recipe

Can cheesecake be salty? Yes, you may not know exactly how, but now we will show you how to make a salty cheesecake with several types of cheese, beets, onions and garlic. Suitable for appetizer or side dish.

Required products :

  • 400 grams of shallots
  • 8 cloves of garlic, peeled
  • 2 teaspoons olive oil
  • 150 grams of red beets, cut (unpeeled) into pieces about 1 centimeter

for the base:

  • 125 grams of bread crumbs
  • 70 grams of hard cheese (cheddar, Monterey jack)
  • 70 grams of melted butter

for the stuffing:

  • 300 grams of soft cheese (goat, cottage cheese, cream)
  • 300 grams of feta
  • 250 grams of mascarpone
  • 4 broken eggs
  • peel of 1 lemon
  • 2 green onion stalks cut into small pieces
  • 1 tablespoon thyme

Method of preparation :

Preheat the oven to 200 degrees. Grease a cheesecake tin.

Grease the garlic and onion. In another bowl, spread the beets.

Transfer them to a pan, taking care not to mix onions, garlic and beets. Cover with foil and bake for 40 minutes, then remove the foil and bake for another 10. Cool to room temperature, then refrigerate.

In a bowl, combine the bread crumbs, cheese and melted butter, season with black pepper. Press the base into the pan you have prepared and bake for 15-20 minutes until the marshmallows are golden.

Using a food processor, grind all the products for the filling to obtain a homogeneous mixture. Pour over the marshmallows and bake for 45-50 minutes until the filling is firm. Refrigerate for at least 5 hours or overnight.

Before serving, remove the cheesecake from the pan and arrange the baked fruit on top. Sprinkle with a little thyme and serve.
