Put the butter and melt in a saucepan. Pour water, milk and salt. After the liquid boils, add the flour and stir vigorously. The dough will begin to separate from the walls and just then pull aside.
Wait for it to cool and add the eggs, one at a time, stirring until smooth. Fill a syringe with the resulting mixture and form eclairs on a lined tray with non-stick paper.
Bake in a preheated oven at 180 degrees until done and cool.
Mix the sour cream with the ham, stir and fill the eclairs with the mixture. Serve garnished with fresh parsley. If desired, you can replace the filling with mayonnaise, pickles, bacon or anything else of your choice.
