Required products :

  • 1 red pepper
  • 1 green pepper
  • 3/4 tea cup flour (self-swelling)
  • 1/4 tea cup usually white flour
  • 2 tablespoons spice mix of your choice
  • 1/3 tea cup fresh basil
  • 1/2 cup grated yellow cheese
  • 100 grams of ham (finely chopped)
  • 2 tablespoons sun-dried tomatoes (finely chopped)
  • 1 clove garlic - pressed
  • 5 eggs
  • 1/3 tea cup olive oil
  • 1/3 tea cup of fresh milk

Method of preparation :

Preheat the oven to 190 degrees and grease a muffin tin with 12 slots.

Cut 12 round slices of each pepper and save for later.

Peel a squash, grate it and chop finely.

In a bowl, mix the flour, the mix of dried spices, tomatoes, basil, cheese, ham, finely chopped peppers and garlic. Stir. In another bowl, beat the eggs, milk and olive oil. Add the liquid ingredients to the dry ones and season with salt and pepper. Stir to combine all products well.

Distribute the mixture in the 12 muffin cups, place a slice of green and red pepper on each cupcake, which you separated at the beginning.

Bake the muffins for 20 minutes until lightly browned. Remove them from the oven, and after 5 minutes (when they cool a bit) and from the molds. Cool completely on a wire rack.
