Required products :

  • 3/4 tea cup wholemeal flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt + 1 pinch
  • 1 1/2 teaspoon low-fat milk
  • 2 large eggs
  • 1 1/2 teaspoons olive oil
  • 1/3 teaspoon black pepper
  • 1/4 avocado - smeared
  • 2 tablespoons salsa
  • 1-2 teaspoons marinated peppers (optional)

Method of preparation :

Mix the flour, baking soda and a quarter teaspoon of salt. In another bowl, mix the milk with 1 egg and olive oil, pour in the flour and mix with a whisk.

Grease a non-stick pan and put 1 ladle of the mixture in it. Bake the pancakes until done. From the indicated amount 8 pancakes are obtained.

In the same pan put more fat and fry a beaten egg, season with salt and pepper, stirring constantly, for about 2-3 minutes.

At the end of a pancake put the egg, mashed avocado, salsa and peppers (if using) and roll.

Save the remaining pancakes for later, or serve the same way. Enjoy a full breakfast while it is still hot.
