Required products :

for the dough:

  • 4 teaspoons flour
  • 1 teaspoon salt
  • 200 grams of butter, cut into cubes
  • 3 eggs
  • 6 tablespoons cold water

for the stuffing:

  • 1 tablespoon olive oil
  • 500 grams of raw sausage - peeled
  • 3 cloves garlic, chopped
  • 3 teaspoons baby spinach
  • 8 eggs
  • 450 grams of ricotta (cottage cheese)
  • 1 cup grated mozzarella (ripe)
  • 1/2 cup grated Parmesan cheese
  • 120 grams of bacon sausages, chopped
  • salt, pepper, beaten egg to spread

Method of preparation :

For the dough, mix the flour with the salt, add the butter and make crumbs with your hands. Add the eggs and stir by hand, then start adding the water, stirring after each spoon. Finally you should get a firm and crumbly dough. Separate 1/3 of it. Wrap the two pieces of dough in foil (separated from each other) and refrigerate for 1 hour.

Meanwhile, make the stuffing - fry the sausage in a little olive oil, breaking it into crumbs with a spatula. When ready - after about 6-7 minutes of frying, add the garlic and spinach. Two minutes later, remove from the heat and allow to cool.

Mix the mozzarella, eggs, ricotta, parmesan and salami together, add the cooled sausage, season with salt and pepper.

Preheat oven to 190 degrees.

Take a small ceramic pan and grease it with oil or spray it with cooking spray.

Roll out most of the dough on a well floured surface and transfer it to the pan, covering the bottom and walls. Cut off the excess dough.

Roll out the smaller one also in a circle, about 20 cm in diameter.

Pour the filling into the pan and cover the top with the smaller piece of dough, making a board at the end of the dough to close the filling well.

Make a slit in the center of the pie to avoid the formation of steam inside it and spread well with egg.

Bake for 1 hour and 15 minutes, then cool for at least another 15 minutes and cut.
