Required products :

  • 300 grams of boiled red beets
  • 300 grams of distilled vinegar or white wine
  • 100 grams of sugar
  • 2 bay leaves
  • 1 tablespoon coriander seeds
  • 1 tablespoon black pepper seeds
  • 6 eggs
  • 1 teaspoon sea salt
  • 3 small bagels, cut lengthwise
  • 3 tablespoons mayonnaise
  • 30 grams of arugula
  • 240 grams of chopped radishes
  • 4 stalks of celery, cut into 4-5 cm sticks

Method of preparation :

Cut half of the beets into slices (put the other half in the fridge for later) and put them in a small saucepan, along with vinegar, 1/2 tablespoon salt, 200 milliliters of water, sugar and spices. Heat until the sugar dissolves, cover and allow to cool to room temperature.

Boil the eggs for 10 minutes, drain them and pour cold water over them, when they cool - peel.

Strain the beet brine, preserving only the liquid, and discard the spices. You can use pieces of red beets for salad.

Put the eggs in the brine and leave in the fridge overnight. The next day, remove them from the marinade, dry and cut into slices.

Cut the separated beets as well.

Spread mayonnaise with mayonnaise and arrange beets and eggs in the sandwich. Add arugula and radishes and serve the sandwich.
