How To Cook Sandwich With Sardines And Pickled Red Onions - Recipe

Required products :

For sardines:

  • 4 cleaned sardines, without heads
  • 1 tablespoon flour
  • pinch of sea salt
  • pepper

for pickling onions:

  • 3 tablespoons olive oil
  • 1 red onion
  • 1 tablespoon sugar
  • 2 tablespoons wine vinegar
  • 1 tablespoon capers
  • 1 handful of parsley, chopped

for serving:

  • 4 slices of bread with kvass
  • 50 grams of soft butter
  • 2 tablespoons wholemeal mustard
  • 1 tomato, cut into thin slices

Method of preparation :

Use a sharp knife to cut the fish lengthwise so that it can dissolve (like a butterfly). Cut the fins and tail with scissors.

Place the fish on a board with the skin facing up and gently press on its backbone to separate it from the fillet. This will loosen the spine of the fish. Be careful if you press too hard you will turn the sardine flesh into a mush.

Turn the fish over and pull out the spine, clean up any bones left. Run your finger through the fish to check for some bones.

Put the flour in a plate and season with a little salt and freshly ground black pepper. Cover each sardine with flour and beat the excess. Set aside on a plate while you cook the onions.

Marinate the onion as in a tablespoon of olive oil in a pan. Add the onion and fry for 4-5 minutes, stirring regularly until soft, but not browned. Stir in the sugar, vinegar, capers and cook for a few seconds, stirring constantly. Remove from the heat and add the parsley.

Heat the remaining olive oil and fry the sardines in them on both sides.

Bake the bread on a toaster or dry pan. Mix the butter with the mustard and spread the slices. On top put a few slices of tomato, sardine and warm pickled onions.
