Method of preparation:
Boil the potatoes in salted water. Drain and put them in cold water. Peel and grate the vegetables.
Add the yolks, flour and season with salt and pepper. Stir the mixture with a fork until you get a dough and knead for 2-3 minutes.
Divide the dough into equal parts, roll out the wicks and cut them into equal pieces. Press each with a fork and do the rest in the same way.
Blanch the potato gnocchi in salted water for 2 minutes and drain. Heat the butter, fry them and serve warm, garnished with grated yellow cheese and fresh arugula leaves.
