How To Cook Scrambled Eggs With Roasted Peppers, Spinach And Parmesan - Recipe

Required products :

  • 2 eggs
  • 1/8 teaspoon salt
  • 1/2 teaspoon olive oil
  • pinch of red pepper flakes
  • 1/2 cup spinach leaves
  • 1/2 finely chopped dried tomato
  • 1 teaspoon finely chopped roasted sweet pepper
  • 1 tablespoon grated Parmesan cheese to serve
  • chopped parsley, ground black pepper and toast to serve the finished dish


Method of preparation :

Beat the eggs with a little salt using a fork.

Heat olive oil in a medium pan and pour the spinach into it, sprinkle with red pepper flakes. Let the leaves cook until soft, stirring occasionally.

Then add the sun-dried tomatoes, roasted peppers, stir for another 30 seconds and then pour the eggs into the pan.

Leave the mixture on the stove until the desired readiness of the dish, stirring.

Sprinkle with grated Parmesan cheese, ground black pepper and chopped fresh parsley. Serve with toasted slices.
