Required products :

  • 5 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon canola oil
  • 1/4 tea cup feta cheese
  • 1/4 tea cup chopped green onions
  • 1/2 cup cherry tomatoes
  • 150 grams of baby spinach
  • 4 slices toasted wholemeal bread

 

Method of preparation :

Beat the eggs in a bowl and season with salt and pepper. Crush the feta cheese and add it to the beaten eggs.

Heat the canola oil in a non-stick pan. Add green onions and tomatoes (halved), cook for 1 minute. Add baby spinach and simmer for another 1 minute until the leaves begin to soften. Pour the egg mixture into the bowl and stir. After 2 minutes the eggs are ready - they should be creamy and tender.

Divide the portion over the 4 slices and serve.
