How To Cook Sesame Cakes With Sheep Cheese And Sausage - Recipe

Necessary products

For the dough:

  • 1,200 pounds of flour
  • 1 teaspoon sugar
  • 3 eggs
  • 200 grams of sour cream
  • 1 teaspoon water
  • 1 cup fresh milk
  • 2 teaspoons salt
  • 1 packet of baking powder
  • 1 teaspoon olive oil
  • cube of fresh yeast


For the stuffing:

  • 300 grams of sheep cheese (can be replaced with white brined cow)
  • 300 grams of sausage (with garlic)

For coverage:

  • 2 tablespoons grape syrup
  • 300 grams of sesame seeds


Method of preparation :

Dissolve the sugar and yeast in a little warm water.

In a large bowl, mix the sour cream with the milk, add the yeast, eggs and 2 teaspoons of salt. Pour in the flour sifted with baking powder and start beating with a mixer, gradually pouring olive oil. After 5-8 minutes you should get a soft, not sticky dough. If necessary, use a little more flour.

Shape the dough into a ball, place in a bowl, cover with a lid or towel and leave for 30-60 minutes in a warm place.

While it rises, prepare the filling.

Mash the sheep's cheese with a fork, cut the sausage into small cubes, then mix the two products.

Return to the dough. Divide it into 30 equal parts (about 80 grams each) and make balls.

Roll them into circles with a diameter of 10-12 centimeters and in the middle of each put a tablespoon of the filling. Close it by folding the dough on both sides towards the center, forming a "seam" where they join.

Mix the grape juice with a glass of water and dip the loaves in this liquid. Then roll them in the seeds and arrange in a tray covered with a sheet of aluminum foil or parchment.

With a sharp knife make cross-sections on the surface of the loaves, which bake for about 20-25 minutes at an oven temperature of 200 degrees.
