Wash the einkorn several times (until the water is clear), pour boiling salted water and cook until ready (the exact time depends on the culture and varies from 20 to 45 minutes, the grains should soften). Then drain the liquid using a colander.
While the einkorn is cooking, make the pesto sauce. Mix the products for it (basil, garlic, roasted pine nuts, grated Parmesan, olive oil and spices to taste) and grind until smooth (trust a blender).
Cherry tomatoes and mozzarella balls cut in half, each of the strawberries - in several pieces (leave 2-3 whole for decoration).
Mix einkorn with pesto sauce, add tomatoes, strawberries, mozzarella and mix gently.
Garnish with whole strawberries and good appetite!
The dish can be served alone or as a side dish.
