Required products :

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 1 red pepper, finely chopped
  • 4 cloves garlic, pressed or finely grated
  • 1/2 cup long grain rice
  • 1 pinch of red pepper flakes
  • 2 teaspoons salt
  • 430 grams of canned tomatoes, mashed
  • 4 teaspoons water
  • 1 teaspoon unsweetened coconut milk
  • 450 grams of shrimp, peeled and cut into pieces the size of 2 centimeters
  • 1/4 teaspoon freshly ground black pepper
  • the juice of 1 lemon, freshly squeezed
  • 1/2 cup fresh parsley, finely chopped

Method of preparation :

 

  • In a large saucepan, heat the olive oil over medium heat.
  • Saute onions, peppers and garlic for a few minutes until soft.
  • Add the rice, red pepper, salt, tomatoes and water. Stir and bring the soup to a boil.
  • Cook for about 10 minutes, until the rice is almost cooked.
  • Add the coconut milk to the soup and after it boils again, add the shrimp.
  • Cook for another 3-5 minutes and season with freshly ground black pepper and lemon juice. Stir and remove from the heat.
  • Serve the soup hot, sprinkled with fresh parsley.
