Required products :

1/2 cup raw cashews, pre-soaked in water for 1 night

400 grams of tofu (solid)

1 - 2 tablespoons freshly squeezed lemon juice

2 tablespoons agave nectar

1 teaspoon apple cider vinegar

1 teaspoon salt

1 teaspoon olive oil

1/2 teaspoon cornstarch (or xanthan - 1/2 teaspoon)

Method of preparation :

Drain the tofu as much as possible from the liquid and set aside for the moment.

Drain the water from the cashews and pour it on a paper towel. Then grind with a blender until smooth. Add the tofu and stir for 3 minutes (make the mixture creamy). Add lemon juice, nectar, vinegar, salt and olive oil. Beat for another 2 minutes, add the starch, stir for a minute and the mixture should begin to thicken.

You can consume the finished cream immediately, but it is better if you put it in the refrigerator for a few hours to make it taste richer.
