How To Cook Skewers With Tortellini, Peppers, Sausage And Olives - Recipe

Required products :

  • 1 red pepper, roasted or raw
  • 24 tortellini with cheese
  • 3 tablespoons extra virgin olive oil
  • 2 teaspoons white wine vinegar
  • 3/4 teaspoon fresh rosemary + stalks for garnish
  • 24 black olives (pitted)
  • 24 basil leaves
  • 12 slices of sausage (salami or other), cut in half

Method of preparation :

Cut the pepper (roasted or raw) into 24 small pieces. Prepare the tortellini according to the instructions on the package, without adding salt. Drain and transfer to a large bowl.

Stir in a small bowl of olive oil, vinegar and fresh rosemary. Separate 1 tablespoon from the dressing, and pour the rest into the bowl with the tortellini and stir.

Pour one olive, tortellini, basil leaf, a piece of pepper and salami on 24 skewers in a row.

Serve the skewers on a plate and season with 1 tablespoon of the dressing. Garnish with sprigs of fresh rosemary.
