Necessary products:

 

  • 1 kilogram of snails
  • 1 onion
  • 1 head of garlic
  • 2 red hot peppers, cut
  • salt, pepper to taste
  • fresh mint leaves
  • 1 tablespoon mix of cumin, coriander and ginger powder

 

Method of preparation:

 

If you have collected the snails yourself, put them in a perforated container with a lid for two days. Wash them well, put in a saucepan with salted water. Heat the water, strain, rinse the snails and repeat the procedure twice.

If you use purchased snails, pre-treated, cleaning in this way is not necessary and you can use them directly. After the third rinse, pour clean water, add chopped onion and a head of garlic.

Cut the peppers and put them in the boiling broth. Season with black pepper, mint leaves and a mix of spices. Add the cleaned snails and cook over low heat for an hour. Divide the dish into bowls, garnish with fresh mint leaves and serve.
