If you have collected the snails yourself, put them in a perforated container with a lid for two days. Wash them well, put in a saucepan with salted water. Heat the water, strain, rinse the snails and repeat the procedure twice.
If you use purchased snails, pre-treated, cleaning in this way is not necessary and you can use them directly. After the third rinse, pour clean water, add chopped onion and a head of garlic.
