Required products :

  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1/3 tea cup of fresh milk
  • 4 proteins
  • 1 teaspoon paprika
  • 1 teaspoon freshly ground nutmeg
  • 4 egg yolks
  • 1 cup Gruyere cheese - grated
  • 2 tablespoons grated Parmesan cheese

Method of preparation :

Start with the preparation of bechamel sauce - melt 1 tablespoon of butter in a pan on low heat, once liquefied, add the flour and stir. Pour the milk in portions, stirring constantly, until a smooth sauce is obtained. Remove from the heat and allow to cool.

Beat the egg whites in the snow.

Add the nutmeg and red pepper to the bechamel sauce. Stir the yolks into the sauce one by one.

Carefully transfer the egg whites to the other mixture and mix with a spatula. You should add Gruyere cheese and combine again.

Spread the remaining oil on 4 small ceramic souffle bowls, then sprinkle them on the bottom and walls with Parmesan cheese.

Distribute the mixture in bowls and bake at 175 degrees for 25 minutes.
