Pour the water into a saucepan, salt it and add the chopped asparagus. Blanch them for 10 minutes, strain and set aside.
Heat the butter, fry the onions, garlic, carrots and season with black pepper and finely chopped mint. Add the asparagus and pour the water. Let the soup simmer on low heat for half an hour.
Cool and beat one or two eggs in the hot broth, stir. Cut the baguettes into slices, grease them with butter and toast them.
Sprinkle with garlic powder and finely chopped parsley. Pour the soup into bowls, garnish with egg and toast. Serve and enjoy the taste.
