How To Cook Soup With Meatballs And Couscous (Italian Wedding Soup) - Recipe

Required products :

for the meatballs:

  • 700 grams of minced chicken
  • 1/2 raw chicken sausage (inside)
  • 1/2 cup panko breadcrumbs
  • 1/3 tea cup grated Parmesan cheese
  • 2 teaspoons oregano
  • 3 cloves garlic, mashed
  • 1 large egg
  • salt, black pepper and hot pepper flakes to taste

for the soup:

  • 2 tablespoons olive oil
  • 1/2 onion, finely chopped
  • 2 sliced ​​and peeled carrots
  • 2 stalks of celery, chopped
  • 2 teaspoons chopped thyme
  • 8 teaspoons chicken broth
  • 3/4 cup fine pasta (like couscous)
  • 4 teaspoons baby spinach
  • 2 tablespoons dill
  • lemon slices for serving

Method of preparation :

Mix the meat, bread crumbs, oregano, parmesan, garlic and egg. Season with salt, pepper and hot pepper flakes. Form small meatballs (balls with a diameter of about 2.5 centimeters). From this amount of meat you should get about 20-22 balls.

Heat 1 tablespoon of olive oil in a saucepan and fry the meatballs until golden brown. Remove from the heat and add another 1 tablespoon of olive oil and fry the onion, carrot, celery and thyme. After 3-4 minutes, when they soften and relax their aroma, add the broth. Bring the liquid to a boil and add the meatballs and couscous. Let simmer for 7-8 minutes until ready. Add the spinach, a minute later, after it softens, remove from the heat.

Serve each portion with extra parmesan.
