Required products :

  • 250 grams of minced beef
  • 2-3 teaspoons of olive oil
  • 1 onion, finely chopped
  • 1 cup chopped celery - stems
  • 1/2 cup diced red pepper
  • 1/2 cup julienne carrots
  • 3 potatoes, peeled and cut into cubes
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried basil
  • 1 liter of chicken broth
  • 4 tablespoons butter
  • 1/3 tea cup flour
  • 2 teaspoons fresh milk
  • 220 grams of cheddar - grated or diced
  • salt and pepper to taste
  • for garnish: fried bacon

Method of preparation :

Fry the minced meat, chopping it, along with the onion and celery for 7-10 minutes until soft. Add olive oil, if necessary, during frying (provided that the minced meat does not release fat).

Add the pepper and cook for a few minutes. Pour the broth and add the carrots, potatoes, parsley and basil.

When the soup boils, cover with a lid and reduce the temperature, let simmer for 30 minutes, until the vegetables soften.

Melt the butter in a saucepan and stir in the flour until lightly browned. Add the milk and stir to dissolve the lumps. Put the cheese and cook on low heat, stirring constantly, until it melts.

Pour the milk mixture into the soup, stir and season with salt and pepper.

Serve with toasted bacon, parsley, croutons or grated extra cheese.
