Required products :

  • 3 tablespoons olive oil
  • 1/2 cup finely chopped carrot (or red pepper)
  • 1 chicken breast fillet
  • 1 large clove of garlic - pressed
  • 5 teaspoons chicken broth
  • 1 1/2 teaspoons dried marjoram
  • 200 grams of baby spinach - chopped
  • 1 can of 400 grams of beans - strained

for the pesto:

  • 1/4 tea cup grated Parmesan cheese
  • 1/3 tea cup fresh basil
  • black pepper to taste
  • croutons for serving

Method of preparation :

Heat 2 tablespoons of the fat in a saucepan and fry the finely chopped carrots. Add the chicken once the vegetables begin to release their color. When the meat is ready after about 3-4 minutes add the garlic, stir and cook for another 1 minute. Pour the broth and season with marjoram, increase the temperature and bring to a boil. Then reduce the heat, simmer the soup for 5 minutes. Remove the chicken with a slotted spoon into a plate.

Add beans and spinach to the broth and cook for 5 minutes.

Put 1 tablespoon of olive oil in a blender, add parmesan and basil. Grind the pesto, if necessary add a little water to get the desired consistency.

Cut the place into cubes and put it in the pan together with the pesto. Stir and sprinkle with black pepper.

Garnish with croutons and serve
