For the mushroom broth :

  • 50 grams of dried mushrooms
  • 6 cloves garlic, lightly crushed
  • 1 small connection thyme
  • 2 bay leaves
  • 1/2 teaspoon black pepper - whole beans
  • For the soup:
  • 1 1/2 teaspoons egg pasta (boiled)
  • 340 grams of mixed forest mushrooms, chopped
  • 2 medium potatoes, peeled and cut into slices
  • 2 stalks of celery, chopped
  • 3 green onions, thinly sliced ​​(separate the green from the white part)
  • pepper
  • 2 tablespoons celery leaves, finely chopped

Method of preparation :

Start by preparing the mushroom broth. Soak the dried mushrooms in 12 teaspoons of water and leave them for 2 hours or overnight at room temperature.

Squeeze the mushrooms out of the liquid in them and save them for future use.

Add garlic, thyme, bay leaf and black pepper to the liquid. Put on a hot plate to simmer until the liquid is reduced by half (for about 1 hour). Strain the broth and discard the spices, return the liquid to the pan.

Bring the broth to a boil again and add the mushrooms, carrots, celery stalks, white onion and season with 1 teaspoon of salt and pepper, simmer for 5 minutes.

Add the pasta and the green part of the onion and season to taste if needed.

Serve the soup with some of the chopped celery leaves.
