How To Cook Soups For Weight Loss: Soup With White Beans And Pesto - Recipe

Required products :

  • 1 tea cup white beans, pre-soaked / or canned beans /
  • 1 medium onion, cut into cubes
  • 2 cloves garlic
  • 2 stalks of leek, washed and chopped
  • 2 large carrots, peeled and sliced
  • 1/2 kg of red potatoes, peeled and cut in half
  • 3 tea cups beetroot / chard /, washed and chopped
  • 4 tea cups of low-sodium vegetable broth
  • 3 teaspoons water
  • 1 tablespoon fresh rosemary, chopped
  • 2 cubes of pesto / frozen / or 2 tablespoons / fresh /
  • olive oil
  • left
  • pepper

Method of preparation :

  • Soak the beans for 1 night or for a minimum of 4 hours
  • In a large saucepan, sauté the onions, garlic, beets and leeks with olive oil over a moderate heat for about 5-6 minutes, until soft.
  • Season with salt and pepper to taste.
  • Add the beans, vegetable broth and water and bring the soup to a boil.
  • Reduce the heat and let the beans cook over medium heat for about 20-25 minutes.
  • Once the beans are boiling, add the potatoes, carrots and chopped rosemary.
  • Put the lid on the pot and let the soup simmer for at least another 10-15 minutes.
  • When the potatoes are cooked, add the pesto and serve.

Note!

If you use canned beans, add it to the soup along with the potatoes and carrots, not beforehand.
