How To Cook Soups For Weight Loss: Warming Soup With Roasted Vegetables - Recipe

Required products :

For the soup :

  • 2 sweet potatoes, peeled and sliced
  • 3 carrots, peeled and sliced
  • 3 tomatoes, halved
  • 2 red peppers, cleaned of seeds
  • 2 red onions, cut into 4
  • 2 tablespoons olive oil
  • 1 tablespoon smoked paprika / plus extra for sprinkling /
  • 1 teaspoon cumin
  • 1 teaspoon coconut milk
  • 3/4 tea cup of water
  • 1 bay leaf
  • salt and pepper to taste

For garnish :

  • fresh parsley
  • a slice of lime

Method of preparation :

  • Arrange the vegetables in a pan, sprinkle with olive oil and bake in a preheated oven to 200 degrees for about 40 minutes.
  • Once cooled, peel the peppers and tomatoes and chop them.
  • Finely chop the potatoes and carrots and mix them with the other products in a saucepan of suitable size.
  • Drizzle with coconut milk and water, season with salt and stir.
  • Wait for the soup to boil, then reduce the heat and simmer for about 20 minutes to allow the flavors to combine.
  • Divide it into six bowls, sprinkle with paprika, black pepper and parsley and garnish with a slice of lime.
  • Serve the soup warm!
