Required products :
1 bunch sorrel
150 ml high-fat cooking cream
30 grams butter
1/2 teaspoon sugar
ground white pepper to taste
salt to taste
thyme to taste
Preparation :
Melt the butter in a suitable container and pour in the finely chopped sorrel. Let it cook for a few minutes on low heat until the leaves darken.
When this happens, pour the cream, add sugar, salt and pepper to taste, and finally thyme. Mix everything and after a few minutes remove from the heat. The sauce is ready, it is a suitable addition to white fish.
If you use low-fat cream, you can thicken the sauce with starch or flour.
