How To Cook Spaghetti In Tomato Sauce With Chickpeas And Garlic - Recipe

Required products :

  • 250 grams of spaghetti
  • 4 - 5 medium tomatoes
  • 300 grams of meat of your choice
  • 1 medium onion head
  • fresh basil to taste
  • 2 pinches of granulated sugar
  • 3 - 4 cloves of garlic
  • 2 tablespoons dried chickpeas
  • 5 - 6 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1/2 teaspoon dry red wine
  • freshly ground black pepper to taste
  • coriander seeds to taste
  • salt to taste

 

Method of preparation:

Fry the tomatoes, then peel. If you wish, you can also clean the seeds. Pour 2-3 tablespoons of olive oil in a suitable bowl, add the tomatoes and let them cook over low heat until a puree is obtained.

Meanwhile, finely chop the onion, meat, onion and garlic.

When the tomatoes are soft, mash them and add the puree. Stir.

Then add the finely chopped basil and sugar.

Let the sauce cook over low heat.

Heat the remaining olive oil in a suitable deep pan, put the meat in it.

When lightly fried, add the onion and garlic. Fry until the onion is translucent.

Then add the tomato puree to the mixture. Stir and pour the wine. Add salt, pepper and coriander seeds. Stew everything for 15 - 20 minutes.

Meanwhile, boil the spaghetti in salted water.

Grind chickpeas until you get flour. Its purpose is to balance and soften the sour taste of the sauce. Unlike wheat and potato flour, chickpea flour has a fine bean flavor.

Dissolve it in half a glass of warm water. Add the mixture to the other products 15 - 20 after they start cooking. Bring to a boil, add salt if you wish and remove from heat.

Drain the water from the prepared spaghetti with a colander and return to the pan. Sprinkle with olive oil and stir.

You can now add the sauce and mix everything well.

Serve with grated Parmesan cheese.
