How To Cook Spaghetti With Broccoli And Parmesan Pesto - Recipe

Required products :

  • 400 grams of diced broccoli
  • 400 grams of spaghetti
  • 5-6 tablespoons olive oil
  • 1 clove garlic, chopped
  • 1/2 cup cooking cream
  • 1 cup parmesan, grated
  • salt and pepper to taste

Method of preparation :

Boil the broccoli in boiling salted water until soft (7-9 minutes). Remove them with a slotted spoon and blend until creamy.

Boil the spaghetti in a saucepan and cook al dente for about 10 minutes or as indicated on the package.

Blend olive oil and garlic together with broccoli until smooth. Transfer to a large bowl and pour in the cream and parmesan. Season with salt and pepper to taste.

Drain the spaghetti, keeping 1 cup of the water in which you boiled them. Transfer them to a large bowl and mix together with the broccoli pesto. If the pesto is too dry, add the glass of water you separated from cooking the spaghetti. Serve, garnished with grated Parmesan cheese if desired.
