How To Cook Spaghetti With Lentils, Eggplant And Tomato Sauce - Recipe

Required products :

  • 1 medium onion
  • 2 stalks of celery
  • 1 large carrot
  • 160 milliliters of red wine
  • 2 cloves garlic
  • 1 tablespoon tomato paste
  • 1 tablespoon balsamic vinegar
  • 2 teaspoons dried oregano
  • 100 grams of mushrooms
  • 1 eggplant
  • 75 grams of boiled lentils
  • 2 cans of 400 grams of chopped tomatoes
  • 300 grams of cooked spaghetti
  • 1 cup dried vegetable broth
  • 1 tablespoon soy sauce
  • 2 tablespoons almond milk
  • basil

Method of preparation :

Pre-chop all the vegetables.

Heat 1 tablespoon olive oil in a large skillet and fry the onions, celery and carrots for 10 minutes until soft. Add the wine and allow the liquid to reduce for about 2-3 minutes. Add the garlic, tomato paste, balsamic vinegar and oregano. A minute later, add the carrots, eggplant, lentils, chopped tomatoes, diced vegetable broth and add 200 milliliters of water.

Once the mixture boils, reduce the temperature, cover and simmer for about 40-50 minutes on low heat. Stir often and add more water if needed.

Mix soy sauce and almond milk. Boil the spaghetti and serve on a plate, add 1 tablespoon of almond sauce and add the vegetables.

Garnish with basil leaves.
