How To Cook Spaghetti With Pumpkin, Sausage And Dark Butter - Recipe

Required products :

  • 1 small pumpkin violin
  • 1/2 red onion
  • 3 tablespoons olive oil
  • salt and pepper
  • 500 grams of spaghetti
  • 500 grams of raw sausage, peeled
  • 1/2 teaspoon butter
  • 2 cloves garlic, finely chopped
  • 1 tablespoon sage, finely chopped
  • 2 teaspoons thyme, chopped
  • 1/4 tea parmesan (thinly sliced)

Method of preparation :

Preheat the oven to 210 degrees.

Cut the pumpkin into small cubes and mix them with onion and 2 tablespoons of oil. Divide into two large pans and season with salt and pepper.

Bake until soft, about 30 minutes.

Boil the pasta in salted water until ready, separate 1/2 cup of the water from the spaghetti and strain them.

Fry the sausage in a pan, chopping it into small pieces (for about 10 minutes), transfer it to a plate.

Return the pan to the hob and add the butter. Reduce heat and cook until caramel in color - about 4 minutes. Add the garlic, thyme, sage and, when they release their aroma, remove from the heat.

Put the spaghetti with the pumpkin and sausage in the pan and add 1/4 of the separated water, stir and, if necessary, pour more water.

Serve with parmesan flakes.
