How To Cook Spaghetti With Ricotta, Tomato Sauce And Fried Eggplant - Recipe

Learn how to cook "Spaghetti with ricotta, tomato sauce and fried aubergines". Delicious recipe.

Required products :

  • 250 grams of spaghetti or other pasta of your choice
  • ricotta cheese to taste (can be replaced with yellow cheese)
  • 1 eggplant
  • 500 grams of tomatoes
  • 1 onion
  • connection basil
  • 2 cloves garlic
  • olive oil and spices


Method of preparation :

Cut the aubergines into circles half a centimeter thick. Put them in a bowl and pour salted water for 20 minutes to remove their bitterness.

Peel a squash, grate it and squeeze the juice. Cut them into small pieces.

Cut onion and basil into large pieces, mash one clove of garlic and combine the spices with the tomatoes. Put on low heat and let the mixture prepare by periodically mashing the tomatoes to drain their juice and evaporate.

Pour olive oil to taste in the prepared sauce.

Take the aubergines out of the water, dry them.

Heat olive oil in a pan, put the second clove of garlic in it. When it turns red, take it out and pour the aubergines into the aromatic fat.

Fry them until crusty, turning them periodically on both sides.

Boil the spaghetti, but it should not soften too much, it is best to keep it thick and slightly firm.

Drain the liquid, rinse them under cold water and distribute on a plate. Pour tomato sauce over each portion, add eggplant pieces and sprinkle with ricotta or yellow cheese.

You can decorate with basil leaves.
