How To Cook Spaghetti With Zucchini, Ricotta And Hot Pepper - Recipe

Required products :

  • 400 grams of spaghetti
  • 1 clove of garlic, mashed
  • 250 grams of ricotta
  • 1 large zucchini, grated
  • 300 grams of cherry tomatoes, cut into quarters
  • finely grated rind of half a lemon
  • 2 teaspoons hot red pepper flakes + more to serve

Method of preparation :

Boil the spaghetti in hot salted water for 9 minutes. Drain them and keep half a glass of liquid.

While the spaghetti is cooking, mix together the ricotta, garlic and season with black pepper. Add the sauce to the spaghetti and stir. If necessary, add a little of the preserved water to get a more creamy consistency of the sauce.

Add the zucchini, tomatoes, lemon zest and hot pepper.

Stir and serve. Add extra hot pepper to each serving, if you prefer.
