Required products :

  • 575 grams of potatoes, thinly sliced
  • 2 tablespoons olive oil
  • 1/2 large onion, thinly sliced
  • salt and pepper (freshly ground)
  • 115 grams of chorizo, thinly sliced ​​(or other sausage)
  • 2 cloves garlic, finely chopped
  • 6 large eggs
  • 160 milliliters of fresh milk
  • 3 green onion stalks, finely chopped
  • 100 grams of grated cheddar

Method of preparation :

Boil the potatoes in salted water for about 10 minutes to soften them slightly (they should not be well cooked), then drain them and rinse with cold water.

Meanwhile, fry the onion crescents in olive oil and season with salt and pepper. When soft, add the garlic and sausage. Fry until the chorizo ​​is browned and remove from the heat.

Beat the eggs until foamy, and add the milk, green onions and cheddar. Season with salt and pepper.

Mix the potatoes with the chorizo ​​and mix gently.

Return the mixture to the pan and pour over the eggs.

Cook for 15 minutes at 200 degrees until ready.
