How To Cook Spicy Adjika Seasoning - Recipe

Required products :

500 grams of hot peppers
300-400 grams of garlic
50-70 grams of dill (without stems)
50-70 grams of parsley leaves
50-70 grams of basil leaves (purple)
50-70 grams of coriander leaves
2-3 tablespoons coarse non-iodized salt


Method of preparation :

Wash the peppers, dry them. Without cutting them in half, remove the tails, but do not remove the seeds.
Peel the garlic.
Wash and dry the dill, parsley, basil and coriander. Remove the rough parts, if any, and mix the green spices with the salt. Add the garlic cloves, hot peppers and grind everything together using a mincer (3-4 times) or use a blender. The consistency should become uniform.
Put the mixture in a container (but not aluminum), which does not close tightly, and leave for 3-4 days at room temperature. During this time, the puree will ferment and some of the liquid will evaporate. When the process is complete, distribute the sauce in jars and close them, but do not sterilize. Refrigerate.

Optionally, you can add more favorite spices or hazelnuts.
