How To Cook Spicy Bean Soup With Smoked Shank And Fennel - Recipe

Required products :

  • 1 smoked pork knuckle
  • 2 liters of chicken broth
  • 1 onion
  • 5 cloves garlic
  • 1 head fennel (fennel / fennel)
  • 2 carrots
  • 1 stalk of celery
  • 1/2 celery root
  • 100 milliliters of tomato paste
  • 2 teaspoons fennel seeds
  • 400 grams of red beans
  • 1 teaspoon hot red pepper

 

Method of preparation :

Cut the smoked shank into large pieces, fill them with boiling water and leave for a while.

Soak the red beans for 5-6 hours in cold boiled water, putting the dish in the refrigerator for this time.

Fry the chopped dill, onion and garlic in oil until translucent.

Cut the carrots into circles or small cubes, add them to the spicy mixture and fry.

Then put a stalk of celery, cut like carrots, pour tomato paste and stir.

Roast fennel seeds in a dry pan over medium heat for 5 minutes, but be careful not to burn them.

In a thick-bottomed saucepan, place the shank pieces, fennel seeds, chili pepper flakes, beans and fried vegetables.

Pour the chicken broth and place the dish on the stove.

Boil the soup for 2-2.5 hours, adding hot water if necessary.

Once the meat is soft, remove it from the liquid and cut into small pieces, which are then returned to the pan.
