How To Cook Spicy Chickpeas With Onion, Lemon And Parsley - Recipe

Required products :

  • 425 grams of canned chickpeas, rinsed and drained
  • 2 tablespoons olive oil
  • 1 medium onion, finely grated
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon coriander
  • 1/4 teaspoon hot red pepper
  • 1/4 teaspoon cumin
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 teaspoon fine sea salt
  • pinch of ground black pepper
  • 2 tablespoons fresh parsley, chopped

Method of preparation :

  • Heat olive oil in a large skillet over low heat.
  • Add onion and salt, stir and cook for 10-12 minutes.
  • When the onion softens, increase the heat to medium and add the turmeric, coriander, cayenne pepper and cumin.
  • Saute for 3 minutes, stirring constantly.
  • Add chickpeas, lemon juice, 1 tablespoon parsley and black pepper. Cook for another 5 minutes.
  • Remove from heat and allow to cool. If it is too dry, sprinkle with a little olive oil and a few drops of lemon juice.
  • Transfer the spicy chickpeas to bowls, garnish with the remaining fresh parsley and serve.
