How To Cook Spicy Fusilli With Cauliflower And Cheese - Recipe

You will hardly notice the cauliflower in this delicious pasta, because it is pureed and combined in a creamy sauce with cheese. This is a very good strategy to get your kids to try it, if they don't like it otherwise.

Required products :

  • 3 cups cauliflower
  • 220 grams of whole grain fusilli or pasta
  • 1 cup skim milk
  • 1 hot pepper chipotle, chopped + 1 tablespoon chili sauce
  • 1 tablespoon olive oil
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, chopped
  • 4 cups fresh spinach, chopped
  • salt to taste
  • 1 tablespoon Dijon mustard (whole grain)
  • 1 cup cheddar cheese, grated
  • 1/2 cup mozzarella, grated
  • black and red pepper (optional)

* A tea cup is used to measure the quantities.

Method of preparation :

Steam the cauliflower.

Boil the fusilli according to the instructions on the package, strain and transfer to a large bowl.

Blend the cauliflower until smooth together with the milk, hot chipotle peppers and chili sauce.

Heat over medium heat in a large saucepan olive oil and fry the onions until soft, then add the garlic and fry for about 1 minute, stirring. Pour the spinach and cook until soft, then reduce the temperature to medium low and add the blended cauliflower, stir. Season with salt and mustard. Pour the cheddar cheese and mozzarella into the pot and stir until smooth. Remove from the heat. Pour the sauce over the fusilli and mix gently.

Serve and, if desired, garnish with black and red pepper.
